Considered Traulsen’s premium line of refrigeration, the R&A Series includes their exclusive INTEL-TRAUL microprocessor control for precise temperatures in the refrigerator, freezer, and hot-food holding cabinets.
INTELA-TRAUL is a simple three-digit LED display that indicates the Fahrenheit or Celsius temperatures and a RS485 data port that allows for connection to a network. Audiovisual alarms for Hi/Lo cabinet temperatures, clean condenser, evaporator coil failure, door open, discharge line senor failure and power supply interruption.
In the kitchen, space is limited. Therefore, the Dual-Temp Traulsen Refrigeration Cabinets allow for a large storage space in a small footprint. The cabinet and door(s) are insulated with an average of 2-inch-thick, high-density, non-CFC, foamed-in-place polyurethane.
With Traulsen, you can expect high quality, durable products. They are built to last with a cabinet exterior front, one-piece sides, louver assembly and doors constructed of 20-gauge stainless steel. Specifically on the R-Series, the cabinet interior and door liners are also constructed of stainless steel. On the A-Series anodized aluminum is used, also built to withstand the rigors of a busy kitchen. Cam-Lift hinges and the horizontal workflow door handle are both guaranteed for life!
Imagine how a Rack System can simplify your refrigeration needs in a restaurant. Most typical foodservice operations require a walk-in cooler, walk-in freezer, ice machine, reach-ins, merchandisers, and display cases that each have their own refrigeration system. What a Rack system does is simplify all that into a single remote refrigeration system with refrigeration lines running to each piece of equipment as needed.
One of the leading manufacturers of these Rack Systems is Cold Zone, and the only manufacturer that is vertically integrated (Cold Zone manufactures condenser surfaces and evaporator coils as well). This vertical integration helps lower transactional costs, ensures consistent quality, and allows for customization of the product.
Take a look at all the features packed in a Cold Zone Rack System:
Pre-wired electrical panels, eliminating the need for running new wires or added circuit breakers. The equipment simply wires up to the existing circuit board.
Single point piping and roof penetrations reduce the potential for costly leaks, and allow the new equipment lines to be patched into the system at the same indoor location.
Oversized condensers and variable speed compressors
Excess noise and heat is reduced by venting and compressor in the remote location, saving money in cooling costs.
Cold Zone UL listed systems are available for roof, pad or remote indoor installations.
Demand Defrost saves energy because defrost cycles are only initiated when actually needed.
Digitally controlled fan motors that can modulate their speed to adjust compressor capacity, allowing the reduction of energy costs by up to 30% while providing temperature control within ½ degree F.
When a guest first sits down at the table of a restaurant, often the first question they ask is: “What is your soup for today?”
For many people, a cup of soup determines the direction their dinner will take, and what food options they will likely decide on. Soup combines perfectly with other lighter food items to either be a light choice for a meal, or it could be an appetizer for their main entrée.
The great thing about Hatco’s Soup Station is that it is lightweight, and easily moves from location to location. Two soup wells operate separately, allowing each soup to be served at different temperatures. The Hatco Soup Station is offered in either seven or eleven quart sizes, and has multiple customizable options that allow the dining establishment to create their best soup for their guests.

As a desire for healthy eating rises, the desire for farm fresh foods has never been more trendy. The demand for this fresh produce can become quite a challenge for foodservice professionals.
Luckily, those over at Franke have recognized this challenge, and presented a solution with the APS300 (Air Purification System). The APS300 has been honored as a 2015 Kitchen Innovation Award winner, and comes with benefits that produce less waste, no flavor transfer, a cleaner and odor-free walk in, and reduced mold in kitchen ventilation systems. As an added bonus, it keeps produce fresh twice as long.
Striping microbes, ethylenes, hydrocarbons, odors, and other containments from the air removes impurities that produce premature spoilage. Ethylene is a naturally occurring plant hormone released by many fruits and vegetables that speeds ripening. The combination of ethylene gas and airborne microbes can circulate between stored produce and accelerate ripening, mold growth, decay, wilting, spotting, and discoloration of valuable produce.
What Franke’s APS300 does is eliminates contaminants in food storage refrigerators and walk-in coolers by transforming these contaminants into harmless gases, without the use of filters and harmful chemicals. Everything is treated in the unit rather than in the cooler; air is drawn through the unit and only clean air comes out. It can be used in any walk-in refrigeration unit that is up to 20’x20’ in size.
This proven solution was originally developed for the U.S. Army to help them preserve produce shipped in 20-foot refrigerated containers in support of troop deployments worldwide, and Franke is bringing this same technology to the restaurant industry!
A huge challenge for using growlers in an establishment is sanitizing the bottles. In order to control the quality and taste of the craft beers in the growlers, they must be sanitized properly. In most instances, many operations have turned to hand washing the growlers to get them clean. CMA has come up with a better idea:
CMA’s new Growler Washer solution is two machines in one. It changes from a dish machine to a Growler Washer and back again. The CMA Hi-Temp Sanitizing Bottle Washer Rack is great for washing and sanitizing all shapes and sizes of bottles. The racks are fitted with a spray manifold system that places a strategically positioned spray jet inside the neck of each bottle.
The two in one dual purpose bottle washer rack comes with wash and rinse adapters that replace the lower wash/rinse arms. The adapters are fitted with hoses that quickly connect and disconnect to the side of the Bottle Washer Rack for easy and fast removal of the rack.
